A close cousin to shortbread, these sandies are crumbly and sweet, with a sweet, nutty hit hidden within.

Ingredients
110g butter, softened
1/2 cup Sunflower oil
1/2 cup sugar
1/2 cup icing sugar
1 eggs
2 cups all-purpose flour
1/2 tsp bicarbonate of soda
1 tsp white vinegar
1/2 tsp salt
1 cup almond flakes
100g white chocolate chips
Method

Pre-heat the oven to 180°C and line two baking sheets with baking paper.
Cream the butter, oil, sugar and icing sugar together in a large bowl until light and fluffy.
Add the egg and beat well. Add the vinegar and sift in the flour, bicarbonate of soda and salt, stirring well until it becomes a thick dough.
Stir in the almonds and white chocolate chips.

Make small balls using a heaped tablespoon of mixture and place on the baking tray, leaving space for the biscuits to spread.
Flatten each ball slightly using the palm of your hand.
Bake for 10-12 minutes or until they turn golden brown. Move onto wire racks to cool.
