I'm not vegan, yet these dark, decadent bites are my go-to when it comes to chocolate cookies.
Makes 32 small-ish cookies

Ingredients
300g plain flour 110g cocoa powder 2 tsps baking powder 1/2 tsp salt 2 cups of sugar 1 cup of vegetable oil 120ml soy milk 2 tsps vanilla extract
Method
Preheat the oven to 170°C and line two baking trays with baking paper.
Combine the flour, cocoa powder, baking powder, sugar and salt in a large bowl.
In another measuring jug, combine the oil, soy milk, and vanilla.
Make a well in the centre of the dry ingredients and add the wet ingredients bit by bit, gently stirring until an oily dough forms. If it feels sticky, put the dough in the fridge for 15 minutes to make it easier to work with.
Make small balls from the dough and space them on the baking trays. Flatten each ball slightly with the palm of your hand.
Bake for 12 minutes, 11 if you prefer a softer centre.
Leave them on the tray to cool for 5 minutes - don't try and move them earlier or they crumble - then transfer to a wire rack to finish cooling.
