Sumac is an underappreciated spice, often used in Arabian cuisine. This easy traybake puts the spice to good effect.

Ingredients
8 chicken thighs
1 tbsp olive oil
2 tsp chilli flakes
1 1/2 tbsp sumac
2 tbsp ground cinnamon
1 tbsp ground cumin
For the Yoghurt Sauce:
100ml natural yogurt
2 tbsp white wine vinegar
1 lemon, zested and juiced
1 tbsp dill, finely chopped
1 clove garlic, finely chopped
Method
Heat the oven to 180°C.

Put the chicken thighs into a large baking tray, brush with olive oil and season with salt and pepper. Mix the chilli flakes, sumac, cinnamon and cumin in a small bowl, then coat the thighs generously with the mixture.
Roast for 45 minutes.
While the chicken is cooking, whisk the sauce ingredients together in a small bowl.
Serve the chicken with your preferred vegetables or rice and drizzle generously with the sauce.
