Small Batch Sugar Biscuits (or what to bake with one egg yolk)

This recipe is the perfect solution when you have one egg yolk left over, making just six deliciously crumbly cookies.

Ingredients


4 tbsp unsalted butter, melted

3 cups of granulated sugar

1 large egg yolk

1/2 tsp vanilla extract

1/2 cup + 2 tbsp plain flour

1/4 teaspoon baking soda

1/8 teaspoon fine salt

a handful of peanuts


Method

Preheat the oven to 180°C and line a baking sheet with baking paper. Mix the melted butter, sugar, egg yolk and vanilla extract together until combined.


Sift the flour, baking soda and salt into the bowl and gently fold in to make a smooth dough.


Divide the dough in half and then divide each half into three. Roll that amount of dought into a small ball. Place the dough balls evenly on the baking sheet. Sprinkle a small amount of sugar on top and gently press a peanut into the centre of each ball.


Bake for 10-12 minutes, until the biscuits turn golden and start to crack on the top.


Let the biscuits rest on the baking sheet for a few minutes before moving them to a wire rack to cool.
