Pretty much a throw in and leave recipe, this creamy, peanut-infused chicken is delicious served over rice or noodles.

Cook Time: 4.5 hours
Ingredients
2 cloves garlic, finely chopped
1/2 cup crunchy peanut butter
1 cup chicken stock
450g chicken breast or tenderloins, cut into bite-sized pieces
1 cup grated zucchini
1/3 cup soy sauce
1 tsp brown sugar
1 lime, quartered
1 small bunch of fresh coriander, roughly chopped
rice or noodles to serve
Method

Put the garlic, peanut butter, stock, chicken, zucchini, soy sauce and sugar into the slow cooker. Stir thoroughly to combine.
Cook on low for 4 hours.
Half an hour before serving, add the coriander, reserving a small amount for use as a garnish.
Serve over rice or noodles and garnish with remaining coriander and a wedge of lime for squeezing.
