This easy, slow-cooker veggie stew is a super healthy dinner option with some added pizazz from dates, apricots and Moroccan spices.

Ingredients
1 cup dried chickpeas, rinsed 500g sweet potato, peeled, cut into chunks 1 brown onion, finely chopped
3 small carrots, halved in both directions
1/2 cup dried apricots 8 fresh dates, pitted 2 cups vegetable stock
400g can diced tomatoes
1 Tbsp Moroccan seasoning
2 zucchini, halved lengthways, thickly sliced
Salt and ground black pepper
Grains or rice, to serve
Plain yoghurt, to serve (optional)
Method
Place the chickpeas, sweet potato, onion, carrots, apricots, dates, tomatoes and Moroccan seasoning into the slow cooker. Stir to combine.
Cook on high for 1.5 hours.
Add the zucchini and salt and pepper to taste, stirring well.
Serve wth rice or grains and a big diollop of yoghurt.
