Salmon with a hint of chipotle warmth features in these delicious DIY dinner tacos.

Cook Time: 7-8 minutes
Ingredients
1/2 tsp garlic granules
1 tbsp smoked paprika
1/2 tsp soft brown sugar
250g salmon fillets
1/2 cup fat-free Greek yoghurt
2 tsp chipotle paste
1 lime, juice only
4 small soft tortillas , warmed
2 cups lettuce, shredded
2 salad tomatoes, diced
sliced jalapenos (optional)
Method

Mix the garlic, paprika and sugar together and coat the salmon fillet.
Mix the yoghurt, chipotle paste and lime juice in a small bowl and set aside.
Brush a skillet or griddle pan lightly with oil and heat over medium heat. Add the salmon and cook for a few minutes each side, then use an egg flip to flake the salmon in the pan and cook for a few more minutes.
Serve with warmed tortillas, the chipotle yogurt, shredded lettuce, diced tomatos and jalapenos ready for self assembly.
