Rolo Centered Chocolate Chip Cookies

These American-style chocolate chip cookies have a treat within - a burst of caramel from an embedded Rolo.

Makes around 36 cookies

  • Prep Time: 15 minutes

  • Cook Time: 10 minutes

Ingredients

200g salted butter, softened

1 cup packed light or dark brown sugar

1/2 cup granulated sugar

2 large eggs

2 tsps vanilla extract

330g plain flour

1 tsp bicarbonate of soda

1/2 tsp salt

100g dark chocolate chips

36 individual rolos (or any other similar caramel-based sweet)


Method

Preheat the oven to 190°C. Line two baking trays with baking paper.


In a large bowl, beat the butter, brown sugar and granulated sugar together using a hand or stand mixer until the mixture seems smooth and creamy,


Add the eggs one at a time, mixing each one in. Add the vanilla extract.


Slowly add the flour, bicarbonate of soda, and salt and mix briefly.

Add chocolate chips and use your hands to press them into the mixture.


Roll the mixture into decent sized dough balls (around 2 tbsp per cookie). Press a rolo into the centre of each cookie ball, making sure the rolo is completely encased.


Bake for 10 minutesm until the cookie edges turn golden. Cool on the baking tray for a few minutes, then transfer to a wire rack.
