What's better than sweet and gooey stewed apples with a golden crumble crust? Apple crumble with rhubarb.

Ingredients
450g rhubarb, cut into 3cm sections
350g cooking apples (Granny Smith or Bramleys), peeled, cored and diced into 3cm chunks
1 tsp vanilla extract
120g golden caster sugar
Cream or ice-cream to serve
For the topping: 200g plain flour
100g salted butter, cubed
70g light soft brown sugar
Method
Preheat the oven to 180°C.
Toss the rhubarb, apples, vanilla and sugar together in an shallow casserole dish and cook in the oven for 10 minutes.
In the meantime, rub the butter into the flour in a mixing bowl until it looks like coarse sand. Add the sugar and mix it through. Sprinkle the crumble mixture evenly over the apple and rhubarb and cook for 30 minutes or until the topping is lightly golden brown and the mixutre is bubbling up at the edges.
Serve with ia drizzle of cream or a scoop of vanilla ice cream.
