These pork patties have the zing of Thai red curry paste, along with sweet and spicy hits with the vibrant mango salsa.

Ingredients
2 medium sweet potatoes, cut into wedges or thick fries
1 Tbsp Olive oil
1/2 Tbsp Paprika
400g Lean pork mince
1 Tbsp Thai red curry paste
1 small Onion, grated
A small bunch of Coriander, roughly chopped
1 Mango, diced
1 Red chilli, finely chopped
1/2 Lime, juiced
Method

Preheat the oven to 200°c.
Toss the potato wedges with half the olive oil and the paprika. Lay them out in a single layer on a baking tray and sprinkle lightly with salt and pepper. Bake for 25 minutes, turning after 15 minutes.
In a large bowl, combine the mince, curry paste, onion and half the coriander. Form into four balls and then flatten them into patties with the palm of your hand.

Brush the patties with a little oil then cook in a griddle pan or frying pan over medium-high heat for 5 minutes or so on each side, until they are cooked through.
In a small bowl, mix together the mango, chilli and remaining coriander. Add the lime juice.
Serve the patties with the sweet potato wedges and spoon the mango salsa over the top.
