Ingredients
1 tablespoon vegetable oil
4 eggs
50g grated Cheddar cheese
salt and freshly ground black pepper
1 tsp pesto
Method
Heat the oil in a frying pan over medium heat.
In a small bowl, whisk the eggs, Cheddar, salt and pepper. Pour the mixture into the frying pan and turn the heat to low. Stir gently and as the mixture starts to thicken, add the pesto, stirring it through the eggs.
Cook for 3-5 minutes, stirring continually, until preferred texture is achieved.
Serve with sourdough toast or crusty home-baked bread.
