Cook Time: 40 minutes
Ingredients
300g plain flour
45g caster sugar
250g salted butter
45g dark brown soft sugar
1 can condensed milk
150g crunchy peanut butter
200g dark chocolate
75g milk chocolate
50g unsalted peanuts, roughly chopped
Method
Chop 200g of the butter into cubes and put it in a large bowl with the flour and caster sugar. Use a mixer to turn it into a dough. Press the dough into the base of a square or rectangular baking tin lined with baking paper. Pop it in the fridge to chill for 15 minutes.
Meanwhile, heat the oven to 180°C. Remove the base from the fridge and prick it lightly all over with a fork. Bake for 25 minutes until it turns lightly golden.
Melt the remaining 50g of butter in a saucepan, together with the brown sugar. Add the condensed milk and bring it to a low boil. Once boiling, stir continuously over heat for 5 minutes or until it noticeably thickens. Add the peanut butter and stir well.
Remove from the heat and pour the caramel over the base, evening it out by shaking the tin. Leave it in the fridge to set.
Once set, melt the dark chocolate and pour it in an even layer over the caramel. Melt the milk chocolate and swirl it over the top, using a fork. Sprinkle the peanuts over the top.
Return it to the fridge to cool.
Use the paper overhang to remove it from the tray and cut into squares to serve.
