Ingredients
For the Okonomiyaki Sauce:
1½ tbsp tomato ketchup
½ tbsp Worcestershire sauce
2 tsp runny honey
1 tsp soy sauce
For the Okonomiyaki:
1 cup flour (any kind)
3/4 cup dashi or water
1 egg
2 cups cabbage, shredded
150g prawns, any size
4 slices bacon
1 spring onion, sliced
Japanese mayonnaise*
1 tbsp dried bonito flakes/1 tbsp nori sprinkle (dried seaweed flakes). These are optional (but recommended) garnishes.
1tbsp vegetable oil
*Note: Japanese mayonnaise is creamier than most. It's available from most supermarkets and worth buying for this recipe, although if unavailable, you can use regular mayo.
Method

Mix the sauce ingredients together in a small bowl and set aside.
Mix the flour, dashi and egg together in a large bowl. Add the cabbage and mix until it is well-coated. Add the prawns and stir again to coat.
Divide the oil between two small to medium-sized frying pans over medium heat. Pour half the mixture in each pan and gently flatten with a spatula. Cut the bacon slices in half and sit on top of the mixture.

Cook for 7-10 minutes on medium heat and then carefully flip over. Cook for another 5 minutes.
Slide onto a plate and drizzle with a generous amount of okonomiyaki sauce. Drizzle the mayonnaise on top in a criss-cross pattern. Sprinkle the spring onion slices and your preferred garnishes on top.
