These no-bake chocolate chip blondies are moist and tasty and come without a side order of guilt.
Makes 10 bite-sized squares

Ingredients
1/2 cup + 2 tbsp coconut flour
1/2 cup of banana, mashed
1/4 cup of smooth peanut butter
1/4 cup of runny honey
1/2 tsp vanilla
2 tbsp dark chocolate chips (optional, but preferred)
Method
Line a loaf tin with baking paper.
In a large bowl, mash the banana and add the peanut butter, honey, and vanilla, mixing in thoroughly.
Once the mixture is smooth and creamy, add the coconut flour and combine well. It will feel dry to start with, but it will come together into a thick paste.
Stir in the chocolate chips and empty the mixture into the loaf tin, Press down with the palm of your hands to spread the mixture evenly across the tin.
Refrigerate for 2 hours until firm.
Pick up the baking paper, removing the slice from the pan, Cut it into individual squares and munch away.
