These light maple sugar biscuits are crispy on the outside and that teensy bit chewy on the inside. Perfect for an afternoon treat.

Ingredients
170g butter, melted
1 cup of sugar + extra for coating
1 large egg
1/4 cup of maple syrup
2 tsps bicarbonate of soda
1 tsp vanilla extract
2 cups of plain flour
Method
Line two baking trays with baking paper. Preheat the ove to 180°C.
In a large bowl, mix the butter and sugar. Stir in the egg, maple syrup, bicarbonate of soda and vanilla.
Fold in the flour and stir until it forms a well-combined dough. Cover with cling film and chill in the freezer for 15 minutes so the dough is less sticky.
Roll your dough into small balls.
Sprinkle some sugar into a saucer and roll each ball in the sugar to coat.
Place the balls on the baking tray, leaving space between them. Use your palm to gently flatten each ball.
Bake for 8 minutes until golden brown.
Leave on the tray for a minute or so before transferring to a wire rack to cool.
