This baked schnitzel is lightly crumbed with a herbed breadcrumb. Perfect with a squeeze of lemon.

Ingredients
2 skinless, boneless chicken breasts
2 Tbsp breadcrumbs
2 Tbsp grated or powdered Parmesan cheese
1 tsp garlic granules
1 tsp dried oregano
1/4 tsp salt
1/4 tsp freshly ground black pepper
Method
Place the chicken fillets between two sheets of clingfilm. Use a meat mallet or a rolling pin to beat until they are flat - around 1-2cms.

Mix the breadcrumbs, Parmesan, garlic, oregano salt and pepper together and tip onto a large plate.
Press the chicken breasts into the breadcrumb mixture then flip so the entire schnitzel is coated.
Heat the oven to 200°C. Place the schnitzels on a baking tray and cook for 20. The coating should be lightly golden.
Serve with a lemon wedge for squeezing and baked vegetables.
