This lower fat apple cake is easy to make and retains all the caramelised flavour of a full-fat, moist and delicious apple cake.

Ingredients
600g apples
1 lemon, juice and zest
2 eggs
⅓ cup sweetener suitable for baking
1 tbsp soft brown sugar
a pinch of salt
110g plain flour, sifted
2 tsp baking powder
75 ml semi-skim milk
Method
Preheat the oven to 180° C. Grease a round cake tin (around 20-22cms).
Peel, core, and thinly slice the apples. Place the slices in a bowl with the lemon juice, making sure all slices are coated in the juice. Set aside.
Put the eggs, sweetener, lemon zest and salt in a bowl and beat until smooth and creamy. Add the flour, baking powder and milk and mix on low speed until all ingredients are combined.
Using a wooden spoon, fold three quarters of the apples into the mix. Pour this into the cake tin.
Arrange the remaining apple slices decoratively over the top. Sprinkle with the brown sugar.
Bake for around 35 minutes or until a toothpick inserted into the center comes out clean. The top should colour slightly to turn golden brown.
Cool completely, then serve. Can be lightly dusted with icing sugar if desired.
