It doesn't matter whether you call them courgettes or zucchinis – the spiralised veg is delicious in this simple stir fried dish.

Ingredients
2 medium courgettes
200-300g raw jumbo prawns
1 tbsp olive oil
Juice of 1 lemon
1tbsp lemon zest
4 cloves garlic, minced
1/2 tsp chilli flakes
a pinch of salt and pepper, to taste
parsley, to garnish
Method
Spiralise the courgette into a bowl and set aside. These are now zoodles/courgetti.
Heat the oil in a wok on medium heat. Add the lemon juice and zest.
Once the wok is warm, add the prawns and cook, turning frequently, until they turn pink. This will only take a few minutes.
Add the garlic and chilli flakes. Season with salt and pepper. Cook for another few minutes, stirring.
Add the zoodles to the pan and stir continuously using tongs while they soften.
Again, this will only take a few minutes. Try not to overcook or the zoodles will go mushy. If anything, undercook them so they retain their texture.
Serve immediately, garnished with parsley.
