This sticky, warming prawn stir fry is a quick dish that's loaded with flavour.

Ingredients
Half a cauliflower, broken into small florets
1 tbsp olive oil
2 small garlic cloves, finely sliced
1 red chilli, finely sliced
1 Tbsp minced ginger
120g prawns, shelled and cleaned
2 Tbsp rice vinegar
4 Tbsp hoisin sauce
2 spring onions, finely sliced
30g peanuts, roughly chopped
brown or basmati rice or noodles to serve
Method
Preheat the oven to 200°C. Add the cauliflower to a baking tray and drizzle with half the olive oil. Slide into the oven and cook for 15-20 minutes until slightly browned and tender.
Heat the other half of the oil in a frying pan. Add the garlic, chilli and ginger, and cook for one minute until fragrant.
Add the prawns and stir fry for a couple of minutes.
Add the vinegar and hoisin sauce and stir in until the prawns are fully coated. Turn off the heat and add the caulfilower, tossing it through the sauce.
Serve on rice or noodles and sprinkle generously with peanuts.
