There are few things better than just-cooked apple crumble. Here's a lower sugar version that retains all the gooey goodness of a standard crumble.
Serves 6
Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients
6 medium-sized apples (Bramleys or Granny Smiths work well, but throw in any you have lying around)
Juice of half a lemon
2 tsp cinnamon
1 tsp vanilla essence
1 tbsp sweetener suitable for baking or honey
100g rolled porridge oats
50g ground almonds
2 tsp plain flour
50g low fat margarine
1 tbsp brown sugar (optional)
Method
Preheat the oven to 180°C. Lightly grease an oven dish or casserole dish.
Peel and core the apples and cut into thin slices.
Combine the apples with the lemon juice, cinnamon, sweetener and vanilla essence.
Spread the mixture in an even layer in the bottom of the oven dish.
Put the oats, ground almonds, flour and butter into a food processer. Pulse until blended into a coarse grain. Sprinkle evenly over the top of the apples.
If using, sprinkle the brown sugar over the top of the crumble.
Bake for 30 minutes until the top of the crumble is golden brown.
Set aside cool slightly before serving with a dollop of low-fat vanilla yoghurt.
