While it's not a visually attractive dish, this hearty lentil and sausage stew is surprisingly tasty.

Ingredients
1 tbsp olive oil
8 pork sausages
2 shallots, sliced
2 cloves garlic, finely chopped
2 carrots
1 tsp chilli flakes
300g green lentils
900m vegetable stock
freshly ground black pepper
1/2 cup frozen peas
1 lemon
Method
Cook the sausages in a large frying pan until nicely golden. Set aside.
Chop the carrots into small pieces. Heat one tablespoon of oil in the pan and add the shallots and garlic. Lightly saute for a few minutes and then add the carrots. Saute for five minutes.
Add the chillies, lentils and stock. Bring everything to the boil, then reduce the heat. Cover the pan and simmer for 30 minutes, until the lentils are tender and most of the liquid has been absorbed.
Add the peas and some freshly ground black pepper, to taste. Slice the sausages into thirds and add the pieces to the mixture. Increase to medium heat and stir until warmed through.
Serve with a lemon wedge to squeeze over the stew.
