With only four ingredients, these biscuits are an easy but tasty treat.
Makes around 20 medium-sized biscuits
Prep Time: 5 minutes
Cook TimeL 12 minutes
Ingredients
200g peanut butter - I prefer crunchy for the added texture
175g golden caster sugar
¼ tsp salt
1 large egg
Method
Pre-heat the oven to 160C and line two baking trays with baking paper.
Put the peanut butter and sugar in a bowl. Add the salt and mix well with a wooden spoon or spatula. Add the egg and mix again until the mixture forms a dough.
Using roughly the equivalent of a heaped tablespoon of the dough, roll it into a ball. Place the balls on the tray and space them well apart. Press the biscuits down with the back of a fork to flatten slightly.
Bake for 12 minutes. The biscuits should be golden around the edges. Cool on the trays for 10 minutes to allow the base to crisp slightly, then transfer to a wire rack and cool completely.
