Dukkah is a Middle Eastern condiment mix made of herbs, nuts, and spices. There are almost as many dukkah mixes in the world as there are Bolognese recipes (see mine here), all delicious, and this one is up there.

Ingredients
4 lamb loin chops
1/4 tsp cloves
1/2 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp paprika
1/4 tsp turmeric
1/4 tsp chilli flakes
25g hazelnuts, chopped
15g pistachios, chopped
1 tsp sesame seeds
2 tbsp runny honey
1/2 orange, juice only
salt and pepper
1 tbsp olive oil
Method
Heat a frying pan and dry fry the cloves, coriander and cumin until fragrant. Place the seeds into a pestle and mortar and grind until powdered.
Combine the spices with the remaining ingredients in a bowl and mix until well-combined.
Rub each lamb chop with the dukkah and orange juice mixture and grill on a hot griddle pan or a barbecue for 3 minutes or so on each side until meat looks slightly caramelised. If there is any leftover dukkah mixture, ladel more onto the chops after turning.
Serve with a grain salad or diced roasted vegetables.
