Sweet yet zingy, this loaf cake is light and refreshing and will most definitely get your tastebuds tingling.

Ingredients
225g self-raising flour
40g desiccated coconut
2 tsps lime rind, finely grated
220g caster sugar
125g butter, melted and cooled to room temperature
2 large eggs 250ml coconut milk
For the drizzle:
200g icing sugar mixture
1 1/2 tbsp lime juice
Method
Preheat the oven to 180°C. Grease and line a loaf tin with baking paper, leaving an overhang of paper to help you remove the loaf later.
Combine the flour, coconut, lime rind and sugar in a bowl. In a separate bowl, whisk together the butter, eggs and coconut milk. Add the wet mixture to the dry mixture and stir to combine. It will have a slightly rough texture due to the coconut.
Pour the mixture into the loaf tin and tilt the tin to smooth the surface.
Bake for 40 - 45 minutes, until the loaf starts shrinking slightly from the sides and a skewer inserted into the middle comes out clean.
Let the loaf cool in the pan for 10 minutes and then lift out using the baking paper overhang, remove the paper, and leave to cool completely on a cooling rack.
Set aside in the pan for 5 mins. Turn onto a wire rack to cool completely.
Once the loaf is cool, mix the lime juice and icing sugar together to make the drizzle. Pour it over the top of the loaf and leave it to set before serving.
