Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients
60g cocoa powder
200g caster sugar
60ml vegetable oil
2 large eggs
1 tsp baking powder
180g plain flour
zest of 2 small oranges
2 tsp allspice
1 tsp cinnamon
50g icing sugar
salt
Method
Mix the caster sugar and oil together in a large bowl. Add the cocoa and then the eggs, one at a time, whisking or beating until combined.
Combine the baking powder, flour, orange zest, allspice, cinnamon and a pinch of salt in a separate bowl. Add this bit by bit to the sugar and oil mix until a dough forms. If the dough feels too tacky, put it in the fridge for half an hour to firm.
Preheat the oven to 190°C and line one or two baking trays with baking paper.
Shake the icing sugar onto a small plate. Take a heaped teaspoon of dough and shape it into a ball. Roll each ball through the icing sugar to lightly coat.
Space the dough balls out on othe baking trays.
Bake for 10 minutes. Leave on the tray for a couple of minutes and then gently transfer them to a wire rack to cool. They may still feel soft, but the outside will harden perfectly as they cool.
