This is my favourite way to eat five a day - by hiding the nutrients within chocolate. This loaf cake is super moist courtesy of the courgette but with the full chocolate flavour.

Cook Time: 45 minutes
Ingredients
110g butter, melted
1/2 cup cocoa
1 1/4 cups of plain flour
1 tsp bicarbonate of soda
1/4 tsp salt
1 cup of granulated sugar
1 large egg
1 large egg yolk
1 tsp vanilla extract
2 cups of grated courgette (2-3 small courgettes)
Method
Preheat the oven to 180°C. Oil a loaf tin and dust it lightly with cocoa powder.
In a large bowl, combine the flour, cocoa, bicarbonate of soda, and salt.
In another bowl, mix the sugar, egg, and egg yolk together into a smooth liquid.
Add the melted butter and vanilla and mix again until smooth. Fold in the courgette.
Add the bowl of dry ingredients bit by bit, stirring as you go.
Pour the mixture into the loaf tin and bake for 45 minutes or so, until a skewer inserted into the centre comes out clean.
Let the cake cool in the tin for 15 minutes and then remove it from the tin and put it on a cooling rack to finish.
Slice and serve. Also tastes great warmed slightly in the microwave.
