This dish is quick and easy, but the chimichurri sauce takes oven-baked salmon to the next level.

Ingredients
For the salmon:
2 salmon fillets
1/2 tbsp olive oil
Salt and pepper, to taste
For the chimichurri sauce: 1/2 cup fresh flat leaf parsley
1/4 cup fresh basil
1/4 cup coriander
1 tbsp olive oil
1 tbsp red wine vinegar
1 tsp lemon juice
2 cloves garlic
4 tsp sea salt
1/4 tsp crushed red pepper flakes
Method
Preheat the oven to 220°C.
Lay some baking paper on a baking tray.
Place the salmon fillets skin-side down on the baking paper and brush lightly with with oil. Season each filet with salt and pepper.
Bake the salmon in the oven for 10 minutes.
To make the chimichurri sauce, combine all of the ingredients and use a blender to roughly chop. Spoon the chimichurri sauce over the salmon and serve with vegetables.
