Cherry-topped Biscuits

Pretty little biscuits with a cherry on top.

Makes around 30

Ingredients

220g unsalted butter, room temperature

100g white sugar

1 tsp Canola oil

2 Tbsp water - 2 Tbsp

1 tsp baking powder

1/4 tsp salt - 1/4 tsp

1 tsp vanilla extract

300g plain flour

glace cherries, halved


Method

Preheat the oven to 180°C and line a baking tray with baking paper.


Put the butter and sugar in a mixing bowl and use a hand mixer to beat them together until the mixture is light and fluffy. You can do this by hand if needed, it just takes longer. In a separate bowl, add the oil, water and baking powder and mix together well. Tip this mixture into the butter mix and stir them together.


Add the vanilla extract and salt and whisk or mix until the mixture is light and fluffy.

Slowly add the flour, bit by bit, stirring continually, until all of the flour has integrated into the dough.


Take just over a tablespoon full of dough and roll it into a ball. Place the ball on the baking tray, leaving at least a couple of centimetres between each ball of dough.


Gently press one finger into the top of each dough ball to make a space for the cherry. Press the cherry half into this dip.

Bake for 10 minutes until the biscuits are slightly golden. Remove from the oven and leave them on the tray for 2 minutes before transferring them to a wire rack to finish cooling.
