Part cake, part biscuit, these rock cakes are a delicious way to put bananas that have seen their best days to good use.

Makes 26-30

Ingredients
1/2 cup of unsalted butter, room temperature
1 cup of sugar
1 egg
1 cup of mashed bananas (roughly 2 large bananas)
1 tsp bicarbonate of soda
2 cups of plain flour
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/2 cup chocolate chips
Method

Preheat the oven to 180°C.
Cream the butter and sugar using beaters or bicep strength, mixing them together until they become pale and fluffy.
Add the egg and continue to beat until combined.
In a separate bowl, mash the banana and add the bicarbonate of soda. Let is sit for a couple of minutes before adding it to the butter mixture.

In a separate bowl again, whisk the flour, salt and spices together. Add the dry ingredients to the wet ingredients and gently mix them together until they are just combined, into a sticky mass.
Gently fold in the chocolate chips.
Drop dollops of mixture onto a baking tray lined with baking paper. leaving space between for them to expand.
Bake for 13 minutes or until they turn golden brown. Cool on a wire rack.
